Mexican Pizza
I hope some of you are trying One New Recipe a Week even every two weeks. I never liked the same thing over and over again. I like variety in my life. When I would stop at Taco Bell once in a blue moon, (How long is a blue moon?) I would get the Mexican Pizza. Every time I would eat it, I would think, “I could make this”, but didn’t until last year and Taco Bell has been in our area for a long, long time.
Since, we live in Honduras, I can find tostado shells easily and decided to make them. One is enough for me, but my husband can eat two. Well, I think that he can always eat two of anything.
Above is pictured the ingredients for the pizza but I already, browned the hamburger. This is a quick recipe to prepare unless you are going to make your own refried beans.
- 1 can refried beans-if you heat them, it’s easier to spread
- 2 c shredded cheddar cheese
- taco sauce-I make my own
- 1 lb. browned hamburger with taco seasoning
- 1 or 2 chopped tomatoes
- sliced black olives
- tostado shells
- Place 4 to 6 shells on a cookie sheet. Now top each one with refried beans, hamburger, and small amount of cheese. I like more than small amount. Top with another tostado shell. Spread the top shell with taco sauce and place tomatoes and olives on top of that, then top with cheese. The more the better is my saying. Put into a preheated 400F oven and bake for around 8 minutes.

These would, also, be good for a Mexican-themed party rather than just rice dishes and doritos.
